Curtis Stone's Cinnamon French Toast - PCOS-Friendly Recipe

Ingredients
- 6 large eggs
- 4 slice brioche bread
- 2 tbsp. butter
- 1/4 c. sugar
- 2 tsp. ground cinnamon
- 1/3 c. Crème fraîche
Instructions
- To prepare the berry sauce: Using a hand blender, combine all berries and sugar and puree until smooth. Push berries through a fine sieve, discarding seeds and reserving the sauce.
- Place sauce in a small saucepan over moderate heat and allow sauce to warm; keep warm until ready to serve over French toast.
- To prepare the French toast: Using a fork, beat the eggs in a 13x9 baking dish to blend. Place the slices of brioche in the egg mixture. Let stand for 5 minutes or until the eggs are absorbed, turning the brioche slices once.
- Melt butter on Breville Indoor BBQ & Grill over medium heat. Place the brioche slices on the grill and cook for about 2 minutes per side or until golden brown on the outside and heated through.
- Meanwhile, stir the sugar and cinnamon on a large plate or pie dish. Transfer the French toast to a cutting board and cut the French toast diagonally in half.
- Immediately place the hot French toast in the cinnamon-sugar and turn to coat completely. Divide the French toast among 4 serving plates and generously drizzle with the berry sauce. Spoon a dollop of crème fraîche atop each and serve immediately.
