1 medium zucchini (about 1 cup, grated), 1 medium carrot (about 1 cup, grated), 2 green onions (finely chopped), 1/4 cup all-purpose flour, 1/4 cup whole wheat flour, 2 large eggs, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 2 tablespoons olive oil, 1/2 cup Greek yogurt, 1 tablespoon fresh dill (chopped), 1 teaspoon lemon juice

Instructions

1. Grate zucchini and carrot, then squeeze out excess moisture. 2. In a bowl, combine zucchini, carrot, green onions, flours, eggs, salt, and pepper. 3. Heat olive oil in a pan over medium heat. 4. Scoop 1/4 cup of the mixture into the pan and flatten with a spatula. 5. Cook until golden brown, about 3-4 minutes per side. 6. For the sauce, mix Greek yogurt, dill, and lemon juice. 7.
