2 medium sweet potatoes, 1 cup of canned black beans (drained and rinsed), 1 cup of frozen corn (thawed), 1 teaspoon of olive oil, 1/2 teaspoon of cumin, 1/2 teaspoon of chili powder, 1/4 teaspoon of salt, 1/4 teaspoon of pepper, 2 tablespoons of chopped fresh cilantro, 1/4 cup of shredded cheddar cheese
1. Preheat your oven to 400°F (200°C). 2. Pierce each sweet potato several times with a fork and place on a baking sheet. 3. Bake for 45 minutes or until tender. 4. While the sweet potatoes are baking, heat the olive oil in a pan over medium heat. 5. Add the black beans, corn, cumin, chili powder, salt, and pepper. Cook for 5 minutes. 6. Remove the sweet potatoes from the oven and let cool for 5 minutes. 7. Cut each sweet potato in half and scoop out some of the flesh to make a 'bowl'. 8. Fill each sweet potato 'bowl' with the black bean and corn mixture. 9. Top with shredded cheese and return to the oven for 5 minutes, or until the cheese is melted. 10. Garnish with fresh cilantro before serving.
