Ingredients

2 medium zucchinis, 1/2 lb (225g) ground turkey, 1/2 cup (85g) cooked quinoa, 1/2 cup (75g) diced tomatoes, 1/4 cup (25g) shredded mozzarella, 1/4 cup (60ml) marinara sauce, 1/4 cup (15g) chopped fresh basil, 2 cloves garlic, minced, Salt and pepper to taste

Instructions

1. Preheat oven to 375F (190C). 2. Cut zucchinis in half lengthwise and scoop out the center. 3. In a pan, cook ground turkey until no longer pink. 4. Add garlic, tomatoes, and quinoa to the pan and stir. 5. Spoon the mixture into the zucchini boats. 6. Top with marinara sauce and mozzarella. 7. Bake for 20 minutes or until zucchini is tender. 8. Garnish with fresh basil before serving.
