Ingredients

2 medium zucchinis, 1 cup diced tomatoes, 1/2 cup diced carrots, 1/2 cup diced celery, 1/2 cup diced onion, 2 cloves garlic, 1 cup vegetable broth, 1/2 cup white beans, 1/2 tsp oregano, 1/2 tsp basil, 1/2 tsp thyme, Salt and pepper to taste

Instructions

1. Spiralize the zucchinis into noodles. 2. In a large pot, sauté the onions, carrots, and celery until tender. 3. Add the garlic and sauté for another minute. 4. Add the tomatoes, vegetable broth, beans, and spices. 5. Bring to a boil, then reduce heat and simmer for 20 minutes. 6. Add the zucchini noodles and cook for another 5 minutes. 7. Season with salt and pepper. 8. Serve hot.
