1 large head of cauliflower, 2 tablespoons olive oil, Salt and pepper to taste, 1 cup fresh parsley, 1/4 cup fresh oregano, 3 garlic cloves, 1/2 cup olive oil, 2 tablespoons red wine vinegar, 1/2 teaspoon red pepper flakes
Instructions
1. Preheat the oven to 400°F (200°C). 2. Cut the cauliflower into 1-inch thick steaks. 3. Brush both sides of each steak with olive oil and season with salt and pepper. 4. Roast for 30 minutes, or until golden and tender. 5. While the cauliflower is roasting, make the chimichurri: Combine parsley, oregano, garlic, olive oil, vinegar, and red pepper flakes in a blender or food processor. Blend until smooth. 6. Serve the roasted cauliflower steaks topped with the chimichurri.
