This recipe includes superfoods such as:
1 head green cabbage, 1/2 cup uncooked quinoa (US) or 125 ml (Metric), 1 lb ground turkey (US) or 450 g (Metric), 1 small onion, 2 cloves garlic, 1/2 cup tomato sauce (US) or 125 ml (Metric), 1/4 cup chopped fresh parsley (US) or 60 ml (Metric), Salt and pepper to taste
1. Preheat oven to 350°F (175°C). 2. Cook quinoa according to package instructions. 3. While quinoa is cooking, bring a large pot of water to a boil. Add cabbage and cook for 2-3 minutes until leaves are pliable. 4. In a large bowl, combine cooked quinoa, ground turkey, onion, garlic, parsley, and season with salt and pepper. 5. Carefully peel off 8 cabbage leaves. Place a portion of the turkey and quinoa mixture in the center of each leaf. Roll up, tucking in ends. Place rolls in a baking dish. 6. Pour tomato sauce over the cabbage rolls. Cover with foil and bake for 45-50 minutes.
