2 large zucchinis (600g), 1 cup raw cashews (150g), 1/4 cup nutritional yeast (15g), 1 garlic clove, 1 cup marinara sauce (250g), 1/2 cup chopped spinach (30g), Salt and pepper to taste
1. Preheat oven to 375F (190C). Slice zucchinis lengthwise into thin strips. 2. Soak cashews in hot water for 15 minutes. Drain and blend with nutritional yeast, garlic, salt, and pepper until smooth. 3. Spread a layer of marinara sauce in a baking dish. Layer zucchini slices, cashew cheese, and spinach. Repeat until all ingredients are used, finishing with a layer of marinara sauce. 4. Bake for 30 minutes. Let cool before serving.
