1 medium spaghetti squash (2-3 pounds), 2 boneless skinless chicken breasts (about 1 pound), 2 cups of broccoli florets, 1 cup of Alfredo sauce, 1/2 cup of shredded mozzarella cheese, Salt and pepper to taste
1. Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place the halves cut side down on a baking sheet and roast for about 40 minutes, or until the flesh is tender. 2. While the squash is roasting, cook the chicken breasts in a pan over medium heat until no longer pink in the center. Cut into bite-sized pieces. 3. Steam the broccoli florets until they are tender-crisp. 4. Once the spaghetti squash is done, use a fork to scrape out the flesh into a large bowl. Add the cooked chicken, steamed broccoli, Alfredo sauce, and half of the mozzarella cheese. Mix well. 5. Transfer the mixture to a casserole dish and top with the remaining mozzarella cheese. Bake for 15-20 minutes, or until the cheese is melted and bubbly.
