Ingredients

4 egg whites (US) or 120g (Metric), 2 whole grain tortillas (US) or 70g (Metric), 1 cup spinach (US) or 30g (Metric), 1/4 cup feta cheese (US) or 50g (Metric), 1/2 teaspoon olive oil (US) or 2.5ml (Metric), Salt and pepper to taste

Instructions

1. Heat a non-stick pan over medium heat with olive oil. 2. Whisk the egg whites in a bowl and add them to the pan. 3. Add the spinach and cook until the eggs are done. 4. Season with salt and pepper. 5. Warm the tortillas in a microwave or on a hot pan. 6. Divide the egg and spinach mixture between the tortillas. 7. Sprinkle feta cheese on top. 8. Roll up the tortillas and serve warm.
