Ingredients

2 boneless, skinless chicken breasts (about 1 lb/450g), 1 cup teriyaki sauce (240ml), 1 head of cauliflower (about 2 lbs/900g), 2 cups mixed vegetables (carrots, bell peppers, snow peas) (480g), 1 tablespoon olive oil (15ml), 2 cloves garlic, minced, 1 teaspoon ginger, minced, Salt and pepper to taste

Instructions

1. Marinate the chicken breasts in the teriyaki sauce for at least 30 minutes. 2. While the chicken is marinating, prepare the cauliflower rice by grating the cauliflower or processing it in a food processor until it resembles rice. 3. Heat the olive oil in a large pan over medium heat. Add the garlic and ginger and sauté until fragrant. 4. Add the mixed vegetables and sauté until tender. 5. Push the vegetables to one side of the pan and add the chicken breasts. Cook for about 6-7 minutes on each side, or until cooked through. 6. Add the cauliflower rice to the pan and stir everything together. Cook for another 5 minutes, or until the cauliflower rice is tender. 7. Season with salt and pepper to taste and serve.
