1 cup almond flour (120g), 1/4 cup unsalted butter (60g), 1/4 cup cream cheese (60g), 1/4 cup erythritol (60g), 1/4 cup chopped walnuts (30g), 1/4 cup unsweetened dark chocolate chips (45g), 1/2 tsp vanilla extract (2.5ml), 1/4 tsp salt (1.25g)

Instructions

1. Preheat oven to 350F (175C). 2. In a bowl, mix almond flour, butter, cream cheese, erythritol, and salt until dough forms. 3. Roll out dough between two pieces of parchment paper. 4. Sprinkle chopped walnuts and chocolate chips evenly over dough. 5. Roll up dough tightly, then slice into 1-inch pieces. 6. Place rugelach on a baking sheet lined with parchment paper. 7. Bake for 15-20 minutes, or until golden brown. 8. Allow to cool before serving.
