2 cups of jackfruit (drained and rinsed), 1 tablespoon of olive oil, 1 red onion (chopped), 2 cloves of garlic (minced), 1 teaspoon of cumin, 1 teaspoon of paprika, 1 teaspoon of oregano, 1 cup of vegetable broth, 1 tablespoon of soy sauce, 1 tablespoon of apple cider vinegar, 1 cup of quinoa, 2 cups of water, Salt to taste, Fresh cilantro for garnish
1. Heat the olive oil in a pan over medium heat. 2. Add the onion and garlic, sauté until the onion is translucent. 3. Add the jackfruit, cumin, paprika, and oregano. Stir well. 4. Add the vegetable broth, soy sauce, and apple cider vinegar. Cover and simmer for 20 minutes. 5. While the jackfruit is cooking, prepare the quinoa. Rinse the quinoa under cold water until the water runs clear. 6. In a separate pot, bring 2 cups of water to a boil. Add the quinoa and a pinch of salt. Cover and reduce heat to low. Cook for 15 minutes, or until all the water is absorbed. 7. Serve the jackfruit over the quinoa, garnished with fresh cilantro.
