2 chicken breasts (about 500g), 1/2 cup shredded Mexican cheese blend (about 60g), 4 low-carb tortillas, 1/2 cup diced bell peppers (about 75g), 1/2 cup diced onions (about 75g), 2 tablespoons olive oil (30ml), 1/2 teaspoon cumin, 1/2 teaspoon chili powder, salt and pepper to taste
1. Preheat your oven to 400°F (200°C). 2. Season the chicken breasts with salt, pepper, cumin, and chili powder. 3. Heat the olive oil in a pan over medium heat. Add the chicken and cook until no longer pink in the center, about 6-7 minutes per side. 4. Remove the chicken from the pan and let it cool. Once cool, shred the chicken. 5. In the same pan, add the diced bell peppers and onions. Cook until softened, about 5 minutes. 6. Add the shredded chicken back into the pan and stir to combine. 7. Place the tortillas on a baking sheet. Divide the chicken mixture and cheese evenly among the tortillas. Fold the tortillas in half over the filling. 8. Bake for 10-12 minutes, or until the tortillas are crispy and the cheese is melted. 9. Serve hot with your favorite low-carb salsa and enjoy!
