1 cup quinoa (170g), 2 cups water (500ml), 1/2 cup chickpeas (85g), 1 medium cucumber, 1 medium bell pepper, 1/4 cup chopped fresh parsley (15g), 2 tablespoons olive oil (30ml), 1 tablespoon lemon juice (15ml), Salt and pepper to taste

Instructions

Add quinoa and reduce heat to low, cover and simmer until tender and most of the liquid has been absorbed, 15 to 20 minutes. 3. In a large bowl, combine cooked quinoa, chickpeas, chopped cucumber, bell pepper, and parsley. 4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the salad and toss to coat. 5. Serve immediately, or refrigerate for up to 2 hours before serving.
