2 chicken breasts, 1 cup enchilada sauce, 1/2 cup shredded cheese, 1/2 cup sour cream, 1/2 cup chopped onions, 2 cloves garlic, 1/2 cup chopped bell peppers, 2 low-carb tortillas, 1 tbsp olive oil, Salt and pepper to taste
1. Preheat the oven to 375°F (190°C). 2. In a pan, heat the olive oil and sauté the onions and garlic until golden. 3. Add the chicken breasts, season with salt and pepper, and cook until no longer pink. 4. Shred the chicken and set aside. 5. In the same pan, add the bell peppers and sauté until soft. 6. Add the shredded chicken back into the pan and mix well. 7. Pour half of the enchilada sauce into a baking dish. 8. Divide the chicken mixture between the tortillas, roll them up, and place them in the dish. 9. Pour the remaining sauce over the enchiladas and sprinkle with cheese. 10. Bake for 20 minutes or until the cheese is melted and bubbly. 11. Serve hot with a dollop of sour cream.
