1 cup almond flour (120g), 1/4 cup coconut flour (30g), 1/2 tsp baking soda, 1/4 tsp salt, 4 eggs, 1/4 cup coconut oil (60ml), 1/3 cup honey (80ml), 1 tbsp lemon zest, 1/2 cup fresh blueberries (75g)

Instructions

1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners. 2. In a large bowl, combine the almond flour, coconut flour, baking soda, and salt. 3. In a separate bowl, whisk together the eggs, coconut oil, honey, and lemon zest. 4. Gradually add the wet ingredients to the dry, stirring until combined. 5. Gently fold in the blueberries. 6. Divide the batter evenly among the muffin cups and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. 7. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
