1 cup almond flour (120g), 1/4 cup coconut flour (28g), 1/2 cup erythritol (100g), 1 tsp baking powder, 1/4 tsp salt, 1/3 cup melted coconut oil (80ml), 1/3 cup almond milk (80ml), 3 large eggs, 1 tsp vanilla extract, zest of 1 lemon, 1 cup fresh blueberries (150g)

Instructions

1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners. 2. In a large bowl, combine the almond flour, coconut flour, erythritol, baking powder, and salt. 3. In a separate bowl, whisk together the melted coconut oil, almond milk, eggs, vanilla extract, and lemon zest. 4. Gradually add the wet ingredients to the dry, stirring until fully combined. 5. Gently fold in the blueberries. 6. Divide the batter evenly among the muffin cups, filling each about 2/3 full. 7.
