Dessert: Molten Chocolate Cakes

Recipe by Gina Mintzer Rich and decadent, these little chocolate cakes are easier to make than they look.

Ingredients

1 1/2 stick unsalted butter
6 oz. bittersweet chocolate
3 tbsp. cocoa powder
3 large eggs
3 large egg yolks
1/3 c. granulated sugar
2 tbsp. granulated sugar
1/4 c. all-purpose flour
2 tbsp. confectioners' sugar

Instructions

Preheat oven to 450 degrees F. In a heatproof bowl set over simmering water, or in the top of a double boiler, melt butter and chocolate. Meanwhile, butter four 6-ounce ramekins and coat all with 2 tablespoons cocoa powder; tap out excess. Transfer ramekins to a baking sheet and set aside. Remove chocolate mixture from heat and set aside to let cool slightly.
In a medium bowl, whisk together eggs, yolks, and granulated sugar. Stir in reserved chocolate mixture. Stir in flour and remaining cocoa powder until just combined. Divide batter among ramekins and bake until cakes are firm yet soft in center, 13 to 14 minutes. Transfer to a wire rack and let cool slightly, about 1 minute.
Invert ramekins onto serving plates to release cakes. Dust tops with confectioners' sugar.
