Ingredients
- 5 lb. white potatoes, peeled and cut into 1-inch pieces
- 6 tbsp. unsalted butter
- 1 (8 oz.) package whipped cream cheese
- 2 c. white cheddar cheese, shredded
- 1 c. Parmesan cheese
- 8 oz. sour cream
- 1 tsp. garlic salt
- Salt and pepper to taste
- Milk (for consistency)
Instructions
- In a saucepan, place potatoes and add enough water to cover. Heat to boiling. Cook uncovered 15 to 20 min or until tender; drain. Mash potatoes.
- In a large bowl, beat cream cheese, cheddar cheese and Parmesan cheese by hand or with a hand mixer on low speed until smooth. Mix in sour cream garlic salt, salt and pepper.
- Stir cheese mixture into mashed potatoes until well blended. If potatoes are too still, stir in milk, 1 tbsp. at a time until desired consistency.
