Sweet grilled peaches pair perfectly with rich, meaty lamb chops and a bright arugula salad for a marvelous Mediterranean-inspired meal.

Ingredients

  • 2 lbs lamb rib chops, (thin)
  • 2 peaches, pitted and sliced into thick wedges
  • 6 cups baby arugula
  • 1/4 red onion, sliced
  • 1 cup mini fresh mozzarella balls
  • 1 drizzle olive oil, to taste
  • balsamic vinegar, to taste
  • kosher salt, to taste
  • black pepper, to taste

Instructions

  1. Season lamb chops and peaches with salt and pepper.
  2. Grill lamb 4 minutes on each side (they will be medium rare.) Grill peaches for 4 minutes on each side as well.
  3. Add arugula to a large bowl and toss with red onion and mozzarella. Drizzle with olive oil and vinegar, season with salt and pepper, then toss again.
  4. Divide the salad between 4 plates and top with lamb and peaches.
