Spinach is a nutrient-dense leafy green vegetable that is rich in vitamins A, C, and K, as well as iron, magnesium, and antioxidants. The high iron content in spinach helps combat anemia, which is common in women with PCOS. Magnesium helps reduce inflammation and improve insulin sensitivity. The antioxidants in spinach can help lower oxidative stress, which is beneficial for managing PCOS symptoms. Including spinach in your diet can support overall health and well-being.
1 large eggs
16 oz raw ground turkey
4 tbsps shredded parmesan cheese
2 tsps garlic powder
1 medium onion, grated
1 cup spinach
1/4 cup bread crumbs
1 splash fat free milk
1. In a large bowl, mix onion, egg, bread crumbs, parmesan and milk. Mix until it turns into a loose paste.
2. Add in ground turkey, chopped spinach, garlic powder and a little salt and pepper. Gently combine all ingredients.
3. Roll mix into small meatballs, about 1-2 inches round. Place on lightly greased cookie sheet. Before placing in oven, spray each meatball with non-stick spray.
4. Cook for about 20-25 minutes, until browned, in 375 °F (190 °C) degree oven.
5. To serve with sauce, drop meatballs in sauce pan with tomato sauce and heat through.
6. Freeze your extras for another meal!
7. Note: serving is per meatball.
