This ultra-creamy, homemade ricotta is incredibly easy to make (and even easier to eat)!
Ingredients
- 1 qt. whole milk
- 2 c. heavy cream
- 1/2 tsp. kosher salt
- 1/4 c. freshly squeezed lemon juice
Instructions
- In a large saucepan over medium heat, add milk and cream. Season with salt. Using a candy thermometer, heat liquid to 200 degrees F.
- Once liquid reaches 200 degrees F, remove from heat. Immediately stir in lemon juice. Let sit for 5 minutes until milk starts to separate.
- Line a fine mesh sieve with ultra-fine cheesecloth and set over a large bowl. Pour liquid through sieve and let strain for at least 1 hour.
- Serve topped with fresh berries and spicy honey.
