Ingredients
- 1 small poblano pepper
- 20 sprig cilantro
- 1/2 c. fresh lime juice
- 1/4 tsp. salt
- 1/4 tsp. Freshly ground pepper
- 1/4 c. vegetable oil
Instructions
- Preheat outdoor grill on medium. Place poblano pepper on hot grill grate. Cook 12 to 15 minutes or until blackened all over, turning occasionally. Wrap pepper in foil; let cool. Remove pepper from foil; peel off skin and discard. Remove and discard stem and seeds.
- Puree pepper in blender or food processor along with cilantro, fresh lime juice, salt, and pepper. With machine running, gradually add vegetable oil until blended. Nutritional information is based on a 2-tablespoon serving.
