Ingredients

  • 1 1/2 pounds ground beef
  • 2 1/2 cups shredded Colby jack
  • 1 cup ketchup
  • 1/2 cup Italian breadcrumbs
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh parsley, chopped
  • 4 slices bacon, cooked crisp and chopped
  • 1 jalapeno, seeds and ribs removed, finely chopped
  • 1 large egg
  • Kosher salt and freshly ground black pepper
  • 2 ounces cream cheese

Instructions

  1. Preheat the oven to 350 degrees F. Combine the ground beef, Colby jack, ketchup, breadcrumbs, mayonnaise, parsley, bacon, jalapeno, egg, 2 tablespoons salt and 2 tablespoons black pepper in a large bowl. Use your hands to mix together. Place the cream cheese in a microwave-safe bowl. Heat in the microwave in 30-second intervals until the cream cheese is soft. Use your hands to fold the cream cheese into the beef mixture until well combined (or use a wooden spoon if the cheese is too warm). Transfer the meatloaf mixture to a 9-by-5-inch loaf pan and bake until beginning to brown and the top is crisping up, 50 to 55 minutes.
