1/4 cup crushed corn flakes cereal 1 1/2 tablespoons yellow cornmeal 2 1/2 teaspoons Creole seasoning 1 pound catfish fillets, cut crosswise into 12 strips Cooking spray Cucumber Coleslaw

Instructions

Combine first 3 ingredients in a shallow dish. Lightly coat catfish with cooking spray. Dredge catfish in cereal mixture. Place catfish in a jellyroll pan coated with cooking spray.
