A yummy, low calorie way to enjoy summer tomatoes.
This recipe includes superfoods such as:
Basil is an excellent stress reliever, and has antioxidant and anti-inflammatory benefits.
1 cup chopped yellow cherry tomato
1 cup chopped orange tomato
1 cup chopped or sliced red tomato
1/2 cup chopped red onion
2 basil leaves, rolled up and sliced
1 tbsp white balsamic vinegar
1 dash salt
1 dash white pepper
1 tsp minced garlic
1 tbsp olive oil
1. Chop tomatoes and onion.
2. Slice basil. Mince garlic (1 or 2 cloves depends on the strength you like).
3. Toss in white balsamic vinegar and salt and pepper to taste.
4. Olive oil is optional, if you would like to add the fat. Enjoy!
5. Note: as an indulgence you can add 1 or 2 shaves reggiano parmesan cheese.
