Ingredients

  • 2 1/2 lb. chicken drumsticks and thighs
  • 1/4 c. hoisin sauce
  • 1/2 tsp. kosher salt, plus more for seasoning
  • 1/2 tsp. Freshly ground black pepper
  • 1 lb. snow peas
  • 1/2 tsp. crushed red pepper flakes
  • 2 tsp. toasted sesame oil
  • Chopped cilantro, for garnish

Instructions

  1. Toss chicken with hoisin sauce, 1/2 teaspoon salt and pepper. Arrange on a foil-lined rimmed baking sheet. Roast in the oven at 450 degrees F for 30 minutes or until cooked through (165 degrees F).
  2. Boil snow peas for 5 minutes or until tender; drain and toss with red pepper flakes, sesame oil and pinch salt.
  3. Serve chicken over snow peas, garnished with cilantro.
