Ingredients

  • 8 (3/8-inch) thick slices pumpkin bread
  • 2 ounces apricot jam
  • 2 ounces mustard fruits, cut in small dice*
  • 2 ounces smoked chicken, cut in small dice
  • 2 plums, halved, pitted and cut into fans, for garnish

Instructions

  1. *Cook's Note: Mustard fruits are available at gourmet markets and Italian specialty stores.
  2. Preheat the oven to 400 degrees F.
  3. Toast the pumpkin bread for about 6 minutes. Allow the bread to cool then spread each slice with a thin layer of apricot jam. In a small bowl, mix the remaining jam with the mustard fruits and smoked chicken. Spoon chicken mixture onto each slice of bread. Cut the sandwiches in half diagonally (corner to corner) and arrange on 4 plates. Garnish with the plums, if desired, and serve.
