2 chicken breasts (500g), 1 cup of brown rice (200g), 2 cloves of garlic, 1 red chili, 1 tablespoon of fish sauce (15ml), 1 tablespoon of soy sauce (15ml), 1 tablespoon of olive oil (15ml), 1 lime, handful of fresh mint and coriander, 1 carrot, 1 cucumber
1. Cook the brown rice according to the package instructions. 2. While the rice is cooking, heat the olive oil in a pan. 3. Add the chicken breasts to the pan and cook until golden brown. 4. Add the garlic and chili to the pan and cook for a further 2 minutes. 5. Add the fish sauce and soy sauce to the pan and stir well. 6. Remove from the heat and squeeze the lime over the chicken. 7. Serve the chicken over the rice and garnish with the fresh mint, coriander, carrot, and cucumber.
