1 medium eggplant (US: 1lb, Metric: 450g), 2 zucchinis (US: 1lb, Metric: 450g), 1 cup of marinara sauce (US: 8oz, Metric: 225g), 1/2 cup of shredded mozzarella cheese (US: 2oz, Metric: 60g), 1/4 cup of grated Parmesan cheese (US: 1oz, Metric: 30g), 1/4 cup of fresh basil leaves, Salt and pepper to taste

Instructions

1. Preheat the oven to 400°F (200°C). 2. Slice the eggplant into 1/2 inch thick rounds and place on a baking sheet. Sprinkle with salt and let sit for 15 minutes. 3. Rinse the eggplant slices and pat dry. Bake for 20 minutes. 4. While the eggplant is baking, spiralize the zucchinis into zoodles. 5. In a baking dish, layer the baked eggplant slices, marinara sauce, and cheeses. Repeat the layers until all ingredients are used. 6. Bake for 20 minutes, or until the cheese is bubbly and golden. 7. While the eggplant is baking, sauté the zoodles in a pan over medium heat for 5 minutes. 8. Serve the eggplant parmesan over the zoodles and garnish with fresh basil.
