1 cup of soy chunks (200g), 2 cups of vegetable broth (500ml), 1 tablespoon of soy sauce (15ml), 2 cloves of garlic, 1 tablespoon of ginger (15g), 1 red bell pepper, 1 cup of snow peas (100g), 1/2 cup of carrots (60g), 1/2 cup of mushrooms (50g), 1 tablespoon of olive oil (15ml), 1 tablespoon of sesame seeds (10g), 2 cups of cooked brown rice (370g)
Soak soy chunks in vegetable broth for 20 minutes. In a pan, heat olive oil and sauté garlic and ginger. Add bell pepper, snow peas, carrots, and mushrooms and stir fry for 5 minutes. Add soaked soy chunks, soy sauce, and sesame seeds. Stir well and cook for another 5 minutes. Serve over cooked brown rice.
