Add some oomph to basic mashed potatoes with this fluffy version that features extra-sharp Cheddar, Neufchâtel-style cream cheese, reduced-fat sour cream and fresh chives.

Ingredients

  • 4 lb. baking potatoes
  • 1 1/4 c. shredded extra-sharp Cheddar cheese
  • 1/2 c. chopped fresh chives
  • 1/2 c. reduced-fat sour cream
  • 1/3 c. 1 ⁄3-less-fat cream cheese (Neufchâtel)
  • 3 tbsp. stick butter
  • 1 1/2 tsp. salt
  • 1/4 tsp. Pepper
  • Toppings: crumbled cooked bacon and shredded Cheddar cheese

Instructions

  1. Boil potatoes in a large pot in water to cover 25 minutes, or until tender when pierced. Scoop off 1 cup cooking water, then drain.
  2. Return potatoes to pot, add cooking water and remaining ingredients, except Toppings, and mash.
  3. Spoon into serving bowl; add Toppings.
